Cauliflower Rice Sushi

Wow, what a game changer for me. I love sushi and I love the sweet sushi rice that they use.
So today, I decided that I would try my cauliflower rice and see if I could at least imitate the flavor, and I got alot more than that. I feel I got the flavor and the texture. Just kicking myself, that I didn't do few more kinds. Next time I will do the spicy tuna, or shrimp, or the crunchy shrimp kind. This time I just did a plain, kinda a californ-ish roll maybe. I am not real savvy for sushi.
This can be made and rolled and cut into sushi rounds. Or you can make a sushi bowl. I did both, I also showed you the different kinds of seaweed wrap or the seaweed sprinkles with sesame. One of my new aquistions. I love the flavor it brings and a plus some good vitamins.

Cauliflower Shushi

Ingredients:
missing is the cauliflower rice, (I bought it fresh in a bag)


Cauliflower Rice

Bag of cauliflower, ( 12 oz ) (cup and 1/2) fresh or you can grate your own.
Rice Wine Vinegar (quarter cup)
Truvia (or you can use sugar) (1tsp) (but you need to add per taste0
Cream cheese ( started with 1 oz and then decided if I needed more) (you just need enough to make the cauliflower stick together)

California-ish roll


Imitation crab meat (broke it up in strips)
Cucumber (cut in thin  strips)
Carrot (shredded)
Avocado  (cut in thin pieces)

How to prepare:

1) Take the cauliflower rice and put in a oven proof dish, pour over it the vinegar and the truvia (or sugar)  (put just a little and then add more, to how sweet you like your rice.)

2) I then pop in my airfryer / or your oven for 8-9 minutes 400. To roast it, I think it makes it a little tender and nicer to eat.

3) Remove and drain on a few paper towels, just so it doesn't make your sushi roll wet.

While  still warm I put back in the dish and mix with the cream cheese. (Start with 1 oz and see if that is enough to bring it together, just like rice, still keeping the texture of rice. So you may not need any more.)


4) Let all this cool. I did it warm and it fell apart, too hot for the seaweed wrap. For the sushi bowl you can just go with it.

5)  After it cools, you are ready.

You can:

  Sushi Wrap.


  Lay the mat down and lay wrap on it.

  Put ready cauliflower rice in the middle all the way leaving an edge all around.
  Then start to lay in your fixings (imitation crab, cucumber, carrot, and the avocado.)

  Start at the bottom and wrap, bringing bottom up and over the mound, and when the green hits the 
  green of the wrap, slightly slide it back (it kinda grabs the whole mound and then you can proceed
  to finish rolling and it should seal, Give it a good pinch and shape before you remove the mat. To
  make it a little more secured.
Helpful Hint:
I cut from the middle, I cut in half first and then each side, half and then half again and I get 8 pieces. I also use a serated knife. It cuts easier.


Finish with a little soy to dip in.



Sushi Bowl




   Lay a few scoops of the cauliflower rice in the bottom


  Layer in your fixings (cut them into a little smaller bites) (imitation crab, cucumbers, shredded
  carrots, and avocado.)

  Then sprinkle with this Nori Komi Furitake (seaweed/sesame seed sprinkle)



 And the finished sushi bowl.

I know this was a really kinda long one today. But I guarantee you will like it. I liked it.It left a fresh taste and light tasting meal. I had to hold back and save the little one a bit to try. It was difficult.
So on my new grocery list I have all the stuff to make it again.
