Different Foods.....Thursday

Sooooo If I don't blog enough I am going to add another day to it...

I am going to try a different food, every week, something I usually don't eat or something that I have never tried. I am trying to expand our food choices.

This week is:

Quinoa (pronounced Keen-wah)

It is a grain. Looks like bird seed actually. I picked up some online to give it a try. I had researched it and it is to have lots of vitamins and protein.

How to I made it:
You have to rinse it about three times till water runs clear. I used a small sievey strainy thing. Then I put it in a bowl. I used 1/2 cups to 1 cup water. I then microwaved it for 7 minutes and stirred. I went a few more minutes to absorb the water. It will look done when the seeds all have curly things coming out.
I let it then cool.
When it was finished I added diced tomatoes, cucumber, and onion. Took a bit of olive oil, balsamic vinegar and lemon juice. Sea salt and tossed. Refrigerated.

It wasn't bad at all, it was kinda like tabouli grains. It made a really refreshing salad. It was so much better the next day, cause it had soaked up all the flavorings.

Who ate it:
I loved it. Husband was indifferent (I am sure if it was covered in ketchup he would have ate it all ) The kids thought it looked icky... SEE WHAT I AM UP AGAINST>>>>>LOL

I would have this again. I think probably would be good with chicken broth and serve like a rice dish.

Hey, Everyone!...
I hope everyone is having a nice summer. All the kids here in GA are back in school. Beats me why? but it is that way around here. My son is finally adjusting to middle school, PE and dressing out has seem to be the only yucky thing Go figure he loves running around here half dressed.
Being a senior is a good thing..right? I have already heard the speech about I should go where I want, when I want and take the car every where. I made the mistake as to say, "my car" and she answered then we need to buy her one.. Oh my I think I fell on the floor lauging.. So adult of me! If you know me then you know that conversation went into the garbage and we all went to our prospective corners.
My daycaring days are slowing down and I have a few afterschoolers and two during the day on Monday afternoons and Thursday and Friday. And you know what that is just plenty. You know sometimes I feel that If I try to do too much, or get to where I want too much, it just defeats the purpose. I love kids and I have tons of patience. I think they may be one of my "God Given Talents". That and knowing a little about everything. Now I am going to have 3 free mornings. I feel really motivated and charged about this.
Maybe I can get to writing again. I am thinking of new blogs. New recipes, and articles I can write and try to get published. Gosh maybe I can sleep in a bit without anyone saying. "Mom" But anyway it goes, I am going to use this time wisely. Feel also like cleaning and throwing out stuff....oooooohhhhhh No!
Well I am going to get busy, busy, busy..

Just talking to you...

You know I have really cut my food budget with making menus. I keep a diary (date book) of all that I need to do, what I eat, groceries, and menus. More like a book about each of my days.

The menu for this week is

Monday ~ Left over Chinese, and take out KFC.
Tuesday ~ Chili and grilled cheese
Wednesday ~ Pork Chops and buttered pasta
Thursday ~ Hot Dogs and fries
Friday ~ ????? The Daddy, son and daughter are running around after school. So not too sure
Saturday ~ Sunday ~ Monday~ cook out hamburgers, hotdogs, potatoe salad, and tuna salad.

My Dieting tips and progress:

My tip that I seem to like the best is my date book. I picked a book with about 7 lines for each day. I draw a corner box, by the day, and put the exercise I want to accomplish that day. Another box with my bloodsugar # and then I list what I eat ( I write real small) talling the calories.
Under that I put an asterick and list what I have to remember for the day.
When I use this method, I can keep track of what I am doing.
I believe whole heartly that dieting is portions and calories. It is a balance. So I write it so I can see the balance.
On the Saturday, section I put a grocery list and on Sunday I put a list of menus. I work on this all week.
Now that I have probably confused you.. I think i confused myself.. Well if you take anything from this silly me thing.. Keep track of what you are putting in your mouth and what exercise you are doing.
My riding the bike really killed me on Monday, but by Friday, I was getting back in the groove. So if you have fallen off the exercise wagon.. Just get back on, start small, but start..

Breakfast Mini Cups

Another thrown together in a pinch breakfast.

Mini breakfast cups

1 can of refrigerator biscuits
1/4 cup of shredded cheese
1/4 bacon bits
1/4 cup of scrambled egg

Spray muffin tin. In each tin put a biscuit and push down a bit to create a small side.
Sprinkle in about a teaspoon or less of bacon bits (you could use any meat)
Sprinkle in a bit of cheese
Then I poured a teaspoon or more (not over the edge) of egg on top.

Baked at 400 for 20 min. Watch at about 15. Mine puffed up like muffins. When done let sit for a minute to cool.
Pull out an serve.

I was also thinking you could do so many different various for breakfast.
I was bet you could lay them on a tray and freeze individual and then pack in a bag for a quick heat up. Quick and easy and no mess.

Other things you could do would also be diced up pizza stuff and cheese and make mini pizza cups. I guess the ideas are endless. Sure makes it quick, not much mess and cheap. Right up my alley.

Baby Bird leaving the nest...

I guess I just wanted to take a moment and tell you about one of my kids, that I have watched grow over the years. He will start real school, (Kindergarten) on Thursday.
I guess you can say I become attached, I mean I invest my heart and soul into each child. I nurture them, teach them, and just lead them to ... the end of the nest. And during the last few months, I prepare them for what is ahead and letting go. I tell them how wonderful, how many friends, and how fun stuff they will get to do. Inside...weeeee... my heart just aches. I am getting the wings cleaned off and ready to fly, without feeling as if they are trading me for those wings..just stretching. On Friday, I will push another one out of the nest. And he is going to fly. I do love when the holidays come, cause they all come back. I always said if the only thing they take from me, is the memories of being kind and loving then I did my job well.
So to my baby bird... goodluck, good travels and a good wind...
See you when the holidays come.
I have been so blessed to stay home and get them during the holidays, times are getting tough money wise and I can only pray that God will send me some more baby birds, so that I can still get to see all my other birds come in for a visit. Hopefully the wind blows in a few more birdies my

Hey everyone, decided to blog a bit today, just to keep in the groove!

Haven’t been up to much this week. This is the second week of school. I feel as if I should have taken out a bank loan. This week alone I paid,
$20.00 lunch for my daughter
$20.00 lunch for my son
$25.00 parking pass for daughter
$25.00 For key club membership for daughter
$65.00 for a Senior Yearbook
$15.00 for Science Club membership for son
$ 170.00 wow, and that was only the first two weeks of school. Hopefully that will be it for a bit.

I am only watching a few kids and the income is low. But I still have to do what I got to do, so I can stay home with my children. Sometimes, I think people think that I do it to make money. But money is the least of the reasons. The number one reason, is so that it makes it possible for me, to be a complete mother. I am not putting down anyone who works, it just doesn’t work for me. I base my values on what I was taught and I reasoned with my thoughts and heart. I believe everyone has to do what they have to do, to make a nice laugh. More power, never judge.
I have been so blessed to be here when my kids come home. And even the kids that come to my house, I have been blessed to be a part of something wonderful. I always say, even if they can’t remember my name, or my face, maybe just at a brief moment they will always remember the love and teachings I left with them.

This weeks menu was:

BQ pork in crock pot w/baked potatoes, onions and ranch
Chicken Soup / brown bread and honey butter.(got that cool brown loaves, like at the outback)
Grilled Chicken Salad / with warm bacon bits and ranch
Hamburger Helper ( my kids asked for it, Guess I cook too many weird stuff)
Fridays, we had ordered wings. (Again I should have made them, mine I think are so much better)

My Diet Progress

Blah....didn’t have the energy this week. I gotta find a medium. I guess I am in transition. Haven’t gained any weight or lost. So I guess that is okay too. I don’t know sometimes, you feel as if you just try so hard and you just get tired of trying. Maybe it is just a mood. Hopefully I will have something positive to say next week.. All I can say this week is never stop trying. Pick yourself up and get going...

Individual Rice Cups

I did it again...well I think I did. I recently went to the store and paid $1.97 for two ready, to micro rice cups. I know lazy prevails. I like them cause they are portioned and quick. But I really got to thinking about it and you know what....

I came up with this:

Your Own Fast Rice

½ cup of instant rice ( I used Minute Rice, but I bet you could get a better price on generic)
½ (or less depending on your taste) teaspoon of chicken boulion seasoning
(or you can use beef)

*At this stage you could put it in baggies ( I squeezed air out, and made about 5 and put them in the cupboard in a square bowl, just handy for them to find, I printed the instructions on a index card and taped it inside the cupboard above the micro) and leave for the kids to finish.

To finish:
½ cup of water ( little shy if you don’t like it a bit wet)
2 cup container
take your 2 cup container
put in rice mixture
and 3 minutes
let sit a few minutes to cool..

I just looked on the large box of minute rice and it said 20 (½ cup) dry servings.
Which equals a 1 cup serving of 200 calories. When I tested this it was a bit shy of one cup.
But they were wanting $1.97 for those two tiny cups of minute rice at the store. So I think I still make out better.
I am going to make up some baggies and will let you know how many I get out of it versus the price.

Just wanted to share with those who are portioned those trying to save a dime here or there. It is all we can do in this day and age..

If you try it let me know..

You know if you know how to dehydrate you could do a batch of diced carrots, onion, peas and add them also, just adjusting the water a bit.

The next thing I am going to figure out is the mac and cheese in a bowl. My kids love that that quick convience...

Back To School Time

Well here in GA our county started back to school.. Now you know it is hotter...than....he---.
But they insist to start them earlier and earlier. Still don't know why, something about not remembering what they learned from one year to the next.. Hey isn't that what summer was all about.. Forgetting, letting go, enjoying, and being young at heart? It is a shame that they will all become such work alcholics at such a young age!!! No wonder we grow old and depressed..

But enough of my thoughts on that one.

My son started middle school. It seems not to be too bad. This year all the 6 graders live in the village..(the trailers, geeeeee and we live in an area where there are tornadoes.. could we be any safer....) But anyway, there won't be any lockers.. yes, you got it they got to carry around their bookbag all day long. My son also has to have a 1" binder for each of his 6 classes and has to carry his gym clothes also, because there were not any more lockers available.

For the science and the social studies there are books for the classroom and cd to take home for the kids to do homework. Now I am not a rocket scientist, but what happens if someone doesn' t have a computer. You know not everyone can be blessed with one, or even the money to have one. I again am shocked with the if you don't have it attitude, then you better get one.. Gee, sell your kids, or trade for

In short, he maybe likes it, but more so not. So really what is new. Still have to tell him to brush his teeth, put your underwear on right, don't eat like an animal and stand up straight. He hates me the majority of the time, but so did she. They do outgrow it. You just have to remember to forget what is said and stay the mom.. It is a dirty job, but someone has to be the mom.

My daughter is now on the top of the food chain......... She is a SENIOR. Oh my, and she knows it too. Naw, she is just too funny. I tell her to enjoy it as long as it lasts cause it goes soooooo fast.

Cooking in my Kitchen

This week made a new thing in my sandwich maker.. just love that little thing... it gets so hot here in GA that sometimes even the oven with AC makes it feel so sticky.
I took refrigerator biscuits (10) and two cheese sticks. Cut the cheese sticks in 5 pieces and place them in the biscuit, shaping like a calazone (half moon) be sure to spray the wells of the maker so they don't stick. Place them in and cook till brown. The kids dipped them in spagetti sauce. It made the cheese just gooey enough but not yucky.

My Diet and Exercise

Got back on my bike yesterday and was soooo disappointed, it killed me.. But today, I got on with out a hitch.. did the 5 miles and was happy with myself. I say this now, but probably in the morning I will be hurting.. but I couldn't stop biking.... Living La Vida Loca was on my MP3 playing and I was speeding...

I really need to rant and rave today.
Today was the first day of school. My son started his first day at the middle school here in GA. He was so nervous all weekend, worried he would get lost, not be able to find where to eat lunch, etc...
This morning he gets up all dressed and ready to go. He goes out side at 7:30 and waits for the bus with his friend down the street. The bus was scheduled for 7:50 so they were even early sitting there waiting. A bus came at 8 and it was the highschool bus, and nothing else until 8:25 which the bus (267) went speeding by, so quick you couldn't see the number until is was past you. We were so sure that they were bus 267. So I called the bus barn, and was put on hold, meanwhile I have two boys, going to a new school, that school started at 8:30. So of course I had already called the school twice and make sure they would get directions and have time, to get their stuff, cause the bus was late. So calling the bus barn again and being put on hold and then transfered to a msg machine that was full. At 8:50 a bus #268 pulls up and asks them if they are going to the middle school and they get on. I again call the school and confirm they are coming.
Meanwhile the bus barn calls me back to tell me that they should have been on bus#222. I was just stunned, because there was no 222 to come by, she then tells me that is must have been late.. well I saw another bus(couldnt see the number at 9:15) could have that been it. I told her that it was supposed to be there between 7:50 and 8 and she told me they were estimated times. And they were all running late... late....late... what so it would have been an hour and a half. Oh my goodness, I am soooooo sick.
So I again call the school to tell them that the kids needed to know that the bus # was 222 so that could atleast get home. Meanwhile on the other line, the mother of the other child, just said, forget it, I will go today at 3 and bring them home. And they can start out fresh tomorrow. So I have to call the school back to tell them mine is a car rider and could he call me... Simple right.. no... they said no, but they would give him a msg. to be a car rider....oh my... They talked to me like I was simple minded and crazy and that these kids (11 yo) were complete adults.
What is this world coming too... So of course I have let my imagination go nuts and think...well 268 picked them up, what if it was some crazy stealing kids...oh.... And of course can't call the stupid school again.. It may trouble them too much to make sure they have my child..
It is 2 now and only an hour more and they will be home...

Wow, it has been one heck of a school vacation (summer) technically it is still summer. I am back to my regular few. I have been one busy, kid..

My kids start back on Monday, I am kinda sad. I actually, probably one of a few that like having their kids around. I would have even gone as far as home school mine. But I think they need the interaction with kids and the real world. So that idea is off the shelf.

I am heading out at 7am to the mighty Walmart with hopes of getting school supplies. I hope it isn't too crazy.. It is a tax free weekend around here. I can only imagine everything being out and sending my kids without. Oh won't that make the transition from elementary school to junior high so much nicer.

Last week went and took my son to get his warts looked at. It had finally gotten to the point where I couldn't figure what was his finger and his warts were. He said so good, while may I explain what they did. They took each one and shaved them down until he had pain.. Oh my, I couldn't even watch, I would have been yelling pain for the moment go.. He was sooooo great. Then if that wasn't enough, (the little boogers, bleed like crazy) she wipes it up and goes and gets the freezer off can.. About the size of a small torch for cooking...yea, and then held the nozzle to each one. I swear he turned a million shades of white. I really felt for him. They bandaged about 5 fingers and we left. He was in such pain. But what a trooper. It has been about a week and they are looking kinda scabby, lets hope that is the end of it. I know he was brave the first time, but the second time he will know what is coming. Think I will let his Daddy take him. You think?

Well this week in my kitchen, I have done some marvelous saves. It seems that I am more creative when I have less. I guess the addage, " Less is more".

Whats cooking:

Crockpot Philly Steak Sandwich.

1 package of steakums
1 onion
1 pepper
1 tablespoon of worshire or A1
1 pk of 6 hogie rolls
4 slices of provolone or your fav cheese

Dice up onion and peppers and layer in crockpot. Break up steakum on top. A bit of worshire. Put on lid and cook on low for about 4 hours. Sometimes it can be quicker. I also used my small crockpot.
When done fix hogie rolls with mayo and cheese and pile up the steakum. It was really good and the best part was that it was all my new "nice saves" in my kitchen. The onion was the last, the green pepper was what I had cut up and saved from a month ago (from my freezer). The steakums were found by accident, they were peeping at me from the corner of the freezer. The only thing I had to buy was the hogie rolls and the cheese. So almost a virtual cheap meal.

Potatoe Pizza

3 potatoes diced
1 onion diced
1 green pepper diced
real bacon bits
eggs ( I used egg beaters)
1/2 cup sour cream
1/2 cup of cheese any type. ( I find that cheddar does the best)
1 pizza crust

I premade the pizza crust and popped in oven to brown. In a pan I sauteed the potatoes, onions, greenpepper in olive oil. When tender I added the bacon bits, and then the egg beaters. Stirred until all cooked.
On the crust, I spread the sour cream on it and then emptied the whole pan on top. Topped with cheese and popped in oven to brown.

This also was a hit.
The kicker to this save was that it really emptied out the old fridge. Everything was needing to be eaten or made into something and this really fit the bill.

Gosh you would think I really love the food.

Exersize and my diet progress

Finally with the kids going back I can get back on my bike and stair master. I can't wait, nothing beats that good feeling.. ( I will probably ache for a bit, but that is okay) I still plan on doing that walking thing in the pool, it has turned out to really be fun and easy. I have no brain cells left from watching kids, so simpler the better.
As for dieting, it is hard. Especially having to watch the Diabetes. It is also harder now that groceries are getting expensive. Trying to stick to the beans and veggies. It is all a big change and small baby steps.

Well I gotta go, my family never bothers me, when I am laying down doing nothing. But the minute I make that motion to do something other than for them, they all come to find me. Hope you guys have a great weekend.. I will get back soon, keep in touch..
