Well I am back.. took me a bit to find the computer.. been a crazy Thanksgiving Holiday week. With the kids and the husband home, I never can even get within 2 feet from the computer.
I hope everyone had a nice Thanksgiving. I myself think I cooked too much. Since I have been losing weight, I didn't seem to have the appetite for the casseroles. I think Christmas I will just do the basic, peas, m/potatoes, gravy, stuffing, turkey and a small ham. Too much, is too much.
I am becoming more of a grazer. A few simple appetizers and my new fav.... Sonics diet limeade...

It seems like life, or my life in general is taking a new path. Gosh, you think you have done it all and God shows you a whole nother way.

We still have the baby and are in the process of talking them into letting him be adopted by us. I will pursue that in February. We have had him for over 2 months solid and the first 2 months of his life, off and on a few weeks. I see this as a win, win situation. He is beautiful and growing fast and alert. He is thriving in this house. I want him to always be and feel safe. So please keep us in your prayers.

Me, well I hit the old orthopedic doctor, Yea! no, I have no cartlidge in either hip, He says it has been years of wear and tear. So the plan is double hip joint replacements.. Fun...You think! He offered me no medicine or anything. Just sent me on my way, saying as long as I can stand the pain....and see me in 6 months.. wow!
Any who, I think when I see him in May I will see if we can start the procedures, Maybe one in the first of June and the other during Thanksgiving next year. We will see. Like my sister said, " Go at it like an athlete" She is right. I have to lose the additional 40 lbs and keep up the exercising. I will be the best patient and get right up on my feet. I know this is a big thing.. but in God all things are possible.

I just wanted to keep everyone up to date..
Gotta run, they are putting up Christmas lights on the house.. May not be able to help much, but I can still run my mouth.. "There aren't joint replacements for my jaws are there?"

To my sister... she knows which one I am speaking about....she just spurs me on to blog. Blogging is a great release of all the fun I have around here.

What's new? Well so far we have had the baby for over a month now. Yes, as your mouth is dropping, I am trying to talk them into letting me adopt him. I checked around though and it is going to be 2000 dollars. Wow, and then you wonder why people don't step up and do the right thing. It seems everything is about money. So now I guess I will be saving up. It may take awhile but hopefully between that time, their situation keeps them away from us and the baby.
He is happy, healthy and growing.
I can't for the life of me understand why some people have children. This particular situation is really kinda of a mess. It seems that a grown man (45) and a grown woman (24) can not seem to see what a priority is. They would rather beg and get assistance than get a job. I am just appalled. I have however just given it all to God. It will be whatever He wants. But for now the baby is safe and here.

As for me... I have an orthopedic appointment on Tuesday, Nov. 25. And if I don't give myself an anxiety attack before I go, I will be fine. I have always for the last few years had problems, getting up, down and just walking around some days. I lost the weight thinking that it would help. 298-238 but it seems to be worse. It seems to radiate around my hip and into the legs. I can probably come up with a million diseases. I just hope it isn't too bad. I really try not to think about it. I will keep everyone up to date.

As for the kids, Elizabeth is enjoying the senior life. I will post one of her essays for college soon. What a tear that from her mother..hahahah
Thomas is on a hiking field trip to canyon mtn.??? never heard of it. But he is in the Science Club. He can be so shy and now he is doing something he loves. I thought this year in school was going to be the same as years before, but he is really holding his own. He has a few weakness' but who doesn't.

Well I am gonna go.. gotta get all the kids up. And the baby.

I just want to ask everyone for their prayers for the baby and for myself.

Just dropping in to leave a few recipes

Well now that it is fall....
Happy Halloween to everyone
I tried a few things this week that I wanted to share. You know the prices of groceries and keeping it simple.

I made a thing called "crash potatoes" I found it on the internet..
It is just what it says it is...hahahha

In the internet recipe it said to use the red small potatoes, but I couldn't wait so I used the regular brown potatoes. I wish that I could tell you all about the differences of a potatoe.. but if it works.. why waste the words.

I took about 10 of the small ones, washed them, poked them and boiled them tender. On a sheet pan, I used parchment paper. (Let me talk about this stuff. Wow, I love it for everything, I know a bit pricey, but sure keeps stuff from sticking. Wings, potatoes,you get the idea. )
I liberally poured some olive oil on sheet pan. Put the 10 potatoes on it and took my potatoe smasher and smashed each one into a neat pile. I used a knife to push it back in one piece out of the smasher thingy. And on each pile I used garlic powder and sea salt and some more olive oil. Put the oven on 350 and they went on the top till they were really crunchy and brown.
The family loved it. I will definately make more.. a real quick side to a meal.

Now the next cool thing I tried.
Was Meatloaf minis rolled in bacon. I used the ground turkey I had hiding in my freezer, did the usual oats, bq sauce, garlic, onion and rolled in big balls and wrapped one piece of bacon around each and put in my muffin tin. I also put a sheet pan underneath, so I wasn't scrubbing the stove for dessert.

These turned out really cool. Leftovers were none. But I bet the could have been good. Made portions really easy.

Okay, Okay, guilty of temporary insanity....HAHA..missing in action, I know.
But I am back.
This month has been a bit hectic. My brother-in-laws new baby has been taking up space in our life. I am almost 48 and wow, couldn't imagine how my parents did it with all 6 of my siblings. My father was also 53 when I was born and even more when my other two little sisters were born. Imagine!
I have been also seen the Diabetes Doctor. I was just a perfect little patient. Go figure! I also lost another 5 lbs not too much of a success since it was for 4 months. But the summer is the most hectic around here and my exercise went to the wayside.
Total Weight two years ago was 298 now I am 242. I am still plugging along. I did however think that the more weight I loss the better the hips and legs would feel. But I think I am wrong. I have made a orthopedic appointment for November 25th. Hopefully it is just something simple, arthritis and muscle imbalance.. I will keep everyone posted.

Had a few new recipes to share..

If you ever have one of those great gyros at the mall someplace, and you get a craving for that taste.

Gyro (My new fab recipe)

1lb of ground lamb (my mother uses a combo of sirlion and lamb and sometimes just sirlion)
4 cups of minute rice (next time i will probably use my wild rice in the cooker, for the fiber content)
shredded lettuce
diced tomatoe
onion (kinda cut horizontal instead of minced or diced)then some minced onion (2tbls)
cucumber (shredded peeled cucumber, about 1/2 cup worth)
sour cream (med carton)
tortilla wrap
cavendar seasoning (greek) (bought this at walmart in the seasoning area)( you have to have this)(there are two kinds, one with salt and one without)

for the cucumber sauce:
put the grated cucumber, and minced onion and blend in the sourcream . (this was great the next day, when all the flavors were absorbed)
brown the meat and then season with the greek seasoning. Add meat and rice together and mix, (I added more seasoning, just love the stuff)

to put together:

Lay down a wrap. Put a scoop of the lamb/rice mixture on the wrap about middle. Then put sourcream sauce, tomatoe, onion, lettuce and then tuck up bottom over stuff. then wrap.

They were great. My family ate 3 each. I even had leftover for me the next day. I just ate the lamb/rice and the sauce. It was sooooo good.

Another one

Had hotdogs buns left over and they were kinda hard. Not bad just not the good squishy type.
SO I made mini panini's out of them . Rolled a piece of ham and cheese and then popped on the grill. When done put dijon mustard.
Also made the cornbeef with cheese and the a bit of sauerkraut on it.
They were really good with a bowl of veggie or chicken soup.

Just a kitchen tip on hotdog buns (kinda stale)
Cook the hotdogs till real hot. Pull buns out of bag, put a hotdog in each and then place them back in the bag. Close and wait a bit and they will steam them.

I am actually posting this on a Sunday. But I wanted it to be read on the Monday....

I sometimes contemplate my life and how much it has evolved and changed and changed. It seems every day, is a different challenge. I sometimes have to stop, and sit and take a deep breath, to remember all the important small things that are so precious to me and mine.

Today (well tomorrow) is October 13. That is the date of my son's birthday. This is my son that I had years ago, and was taken in a car accident. I know saying that may sadden some people, but please don't feel any sorrow.. feel only love and life. You know that old quote, "Better to love and lost, than never love at all" and it really is true. God takes and then opens so many other doors. I have been blessed with two other children and a great family. I look back at my life and I would never change any of it. I have no regrets. I only promise to keep going, keep changing, keep loving.. and isn't that our only true path. God holds him in his arms forever and I can't think of a better place to be. So I know when I sleep that he sleeps with the Lord forever.

This birthday however marks his 25th birthday. I guess a milestone. I have marked them all. What kind of person or mother would I be if I had forgotten the years?

I wanted to write something in tribute to him, but couldn't find the words this year. So I looked up in my past journals and found this one that I wrote for him when he turned 21. I hope you will take a minute and read it.

Hey I am still

Hey everyone one.. still hanging on here.
I have picked up a few more kids to watch.. yep, now I have a year old, 2 year old and two 4 year olds..weeeeeeeeeee... they keep me young though...
I am sorry I am so behind.
I just also am dealing with the new baby issues with my brother in law.. Some people just can't see the writing on the wall. The only one that gets hurt will be the baby. He has to grow up with all that drama. We have kept him off and on. I know that is probably not the thing to do, making it easy for them. But what is the answer. I pray every night, to God. I feel this great need to hang back and assess all of the situation, not just dive in and fix it all. I am the great fixer and I am going against all my instincts to hang back.. But I have been praying for answers...
One day, when I get everyone down for a nap... I am praying for guidance and answers.. the phone rings... (now this will spook ya..) and it is a church calling to ask for people to visit.. it is pre- recorded.. didn't say...blah, come see our church.. It started like this" I have called you to tell you God hears your prayers and there is an answering come soon.. It is just right around the corner. " wow ... bout fell out of the bed.
So for now this baby drama is slowly playing out. I will keep everyone updated.. Just always when you say your prayers add us..... Like I do all my family, friends, enemies and strangers. We are all on this earth together, then we should pray for everyone.
Well enough.. on to other things

Haven't cooked anything cool lately..
Just craving...Has sonic chili cheese tator tots...ohhhhh. Remade them at my house..just as good.
Betty Crocker mashed potatoes and brown beef gravy. As good as KFC.. yes, our favs now.. just in case you need a quickie for the holidays

As for my diet, still holding on. Feeling so much better and more energized. Haven't lost but a few more pounds but did a measure tape thingy...
Head.. same size.... huge and full of brains... never could wear a hat
neck.. Sam Watson's kid never small
Mouth... still big and loud.
The upper area... I lost 3"
the waist...I lost 3"
Hips... I lost 3"
Legs still the same.. too much
I am happy, go to the Endocrinologist Tuesday... I hate them .. never will like them.. Just to get prescriptions filled.

Well I just wanted to touch base.. tell everyone, that I think of them often. Pray always, and wish everyone always just more love and understanding..

Nope I haven't disappeared...

Nope, haven't disappeared off the face of the Earth. Just having some changes going on at my house.. Some of you may know that my brother in law had a new baby 6 weeks ago. And what comes next some of you may not want to But I watched him 4 days last week and we are watching him 4 more this weekend. So that they can get some work going on and get paid. They are like super behind and super sorry....
My husband felt that this was only right, thing to do to help. Yep, I am taking care of a newborn. Weeeee, I know it is crazy.. But I will tell you this some people shouldn't be allowed to pro-create (hope that means pop them babies out!!!) . I know that is probably horrible to say. But I can't understand any one these days.
Well just wanted to stop in and say hello.. Just sooo busy, when I get to a lull, I will try to catch up.
Pray for this baby, that what joy I can bring to him, will carry through his toughest days..

Okay it looks like the first month of this is just grains.. swear I didn't plan it that way, just they keep popping out at me.
This week I bought some rice.
Here is the name of the label.

ROYAL BLEND whole grain. Texmati brown and red rice with pearled barley and rye berries. I have seen it at Krogers. I actually bought mine in a 4 pack... again at I will be looking to see if I can get a better price on it.

It is kinda ricey grains and then some seeds and then darker reddish, brown grains.

How I made it:
I cooked this also in my rice cooker. It was 1 cup rice to 2 and 1/2 cup water. It took a bit of time. I also had to put a towel on the counter to get the hickups my rice maker makes. I put in a bit of olive oil and a bit of chicken boulion. My kids like the flavor to it.

It was very good, very whole grain ricey tasting.I think I would try to hold back just a shy of water to give it a more wholer bite, it was kinda slightly mushy, but not in a bad way.

The family:
I should call them the they ate it all . I made a chicken and brocolli chinese style and they ate it with that.

I will try to buy this again. Just gotta find a bargain..

Different Foods... Thursday, 9/04/08

Okay, I promised you a few different things. I am trying a new food, to my family and maybe new to you.

I will try to share my findings with you.

This week it was:

Forbidden Rice (black rice)

This is an unusual black rice, it was kinda hard to find. But I found it on AMAZON, and ordered it. Kinda expensive. It is full of vitamins and has a lower carb than white rice. So it was kinda a plus.


A short grained rice. Black in color and when cooked it was purple. (It was actually cool)

How I made it:

I used a rice cooker and followed the instruction to how much water to rice. It turned out really good in the cooker (first time, used exact water, which gave it perfection) (second time, used just a bit less and gave it a more nuttier taste) Both times they turned out good. One thing though, when cooking it in the cooker, be sure to put paper towels around. My kinda spits when it gets to cooking well and it spit purple this time.


Well the first time, just served it with fish. It has a really nutty taste, but was overall nice. I mixed a bit of chicken boulion in and gave it a more savory taste.
The second time, I added the rice wine and the sugar and made sushi rice. I even rolled it in the seaweed. It also was good, but kinda hard to eat it all

The family:

Kids thought purple was cool and liked it the first time. The second, you say sushi and they just die. Gosh, would hate for them to eat anything different and good.

I will use this again. I loved the texture and I like enjoying different things.

Hey, kinda lost for words (naw!) this has been a short week with the long weekend we just had. I hope everyone had a safe Labor Day. We had our cookout on Sunday, that way we could just kick back and relax on Monday. Took years to figure that one out. Party and visit and still leave a r-n-r day. It works every time.

I have been working on some keen ideas for making my blog more. So keep your eyes open for some more crazy things to come. I am even trying to get my 11 year old son to start one. I think it is something he would have fun with. Now my 17 year old, not so much, she is the stable one around here..

Water, Water, Water...
Last Wednesday, we went down to the basement and two rooms were big old puddles. The AC had gotten clogged in the condenser line. Thank goodness for my husband. But we work well together. I deligated kids to removing floor tiles, I vacummed (wet vac) and we got it all cleaned up and back in line. WEEEEE missed that bullet. Don't feel like sinking cash into the AC again. So close to the end of the season.
Just when I think we got the wet stuff done, yesterday, my husband comes to tell me....(he finds it all, you know water finds its own level, and unfortunately it is my husband fav, hiding spot, the basement) That the water room (the small room on the side the house leading to the basement) is flooded...gee, could it get any better. So they go outside and the flower bed is flooded. Looked like a pipe, but no just the hose busted. My husband checked it out and we are clear. He went down to the meter and it is leaking. Calling the water company I was told that more or less that a leaking meter is not a priority. Wow, I just then told him that he better document the leak and I wasn't paying for any extra. It is now 10 am and still now repair man. I thought we were in a drought, go figure.

Now that I have filled you in on our life, I want to share something I learned the other day.

Tips, just me talking to you:

When changing my package on my cell phones, I asked that my rollover minutes be transfered. I was told yes, and I asked them to please document on my account. Well low and behold I get the bill and it wasn't done. I called and they researched it and fixed it. So lesson to be learned, 1) I keep a notebook, in which I put down who I called, time and the reason why, and any other things (that way if they don't have it I do!) 2) Ask them to document also 3) and you can ask for roll over minutes to be added 4) always recheck all bills and statements, they are sometimes sneaky left out stuff or added stuff.

Food, Recipes, Menus and stuff:

New Challenge:
My goal from Sept 1 till whenever is that we don't go out to eat for awhile. For me to be motivated, I have 2 banks. In one can, I get a dollar for every day that I do not eat out. (I will use this when I get enough to have a good dinner out) and another can will have another $1 and this is my reward for not going to the store (this is to see how long I can stretch that food money, exception to that is MILK.)
I will let you know how it goes. I already have $2 in each can...yea.....

Menu for this week is

Monday- we cooked out
Tuesday - chicken and pasta
Wednesday - Kabasi, sourkraut and mashed potatoes
Thursday - Chicken strips, mac and cheese
Friday - Hot Dogs
Saturday and Sunday - I am thinking about trying to get a Lasagne in. I also have wings.
Friday- Hot dogs

I am thinking of spreading out my posts a bit, just got to find a happy day for each subject.

Different Foods.....Thursday

Sooooo If I don't blog enough I am going to add another day to it...

I am going to try a different food, every week, something I usually don't eat or something that I have never tried. I am trying to expand our food choices.

This week is:

Quinoa (pronounced Keen-wah)

It is a grain. Looks like bird seed actually. I picked up some online to give it a try. I had researched it and it is to have lots of vitamins and protein.

How to I made it:
You have to rinse it about three times till water runs clear. I used a small sievey strainy thing. Then I put it in a bowl. I used 1/2 cups to 1 cup water. I then microwaved it for 7 minutes and stirred. I went a few more minutes to absorb the water. It will look done when the seeds all have curly things coming out.
I let it then cool.
When it was finished I added diced tomatoes, cucumber, and onion. Took a bit of olive oil, balsamic vinegar and lemon juice. Sea salt and tossed. Refrigerated.

It wasn't bad at all, it was kinda like tabouli grains. It made a really refreshing salad. It was so much better the next day, cause it had soaked up all the flavorings.

Who ate it:
I loved it. Husband was indifferent (I am sure if it was covered in ketchup he would have ate it all ) The kids thought it looked icky... SEE WHAT I AM UP AGAINST>>>>>LOL

I would have this again. I think probably would be good with chicken broth and serve like a rice dish.

Hey, Everyone!...
I hope everyone is having a nice summer. All the kids here in GA are back in school. Beats me why? but it is that way around here. My son is finally adjusting to middle school, PE and dressing out has seem to be the only yucky thing Go figure he loves running around here half dressed.
Being a senior is a good thing..right? I have already heard the speech about I should go where I want, when I want and take the car every where. I made the mistake as to say, "my car" and she answered then we need to buy her one.. Oh my I think I fell on the floor lauging.. So adult of me! If you know me then you know that conversation went into the garbage and we all went to our prospective corners.
My daycaring days are slowing down and I have a few afterschoolers and two during the day on Monday afternoons and Thursday and Friday. And you know what that is just plenty. You know sometimes I feel that If I try to do too much, or get to where I want too much, it just defeats the purpose. I love kids and I have tons of patience. I think they may be one of my "God Given Talents". That and knowing a little about everything. Now I am going to have 3 free mornings. I feel really motivated and charged about this.
Maybe I can get to writing again. I am thinking of new blogs. New recipes, and articles I can write and try to get published. Gosh maybe I can sleep in a bit without anyone saying. "Mom" But anyway it goes, I am going to use this time wisely. Feel also like cleaning and throwing out stuff....oooooohhhhhh No!
Well I am going to get busy, busy, busy..

Just talking to you...

You know I have really cut my food budget with making menus. I keep a diary (date book) of all that I need to do, what I eat, groceries, and menus. More like a book about each of my days.

The menu for this week is

Monday ~ Left over Chinese, and take out KFC.
Tuesday ~ Chili and grilled cheese
Wednesday ~ Pork Chops and buttered pasta
Thursday ~ Hot Dogs and fries
Friday ~ ????? The Daddy, son and daughter are running around after school. So not too sure
Saturday ~ Sunday ~ Monday~ cook out hamburgers, hotdogs, potatoe salad, and tuna salad.

My Dieting tips and progress:

My tip that I seem to like the best is my date book. I picked a book with about 7 lines for each day. I draw a corner box, by the day, and put the exercise I want to accomplish that day. Another box with my bloodsugar # and then I list what I eat ( I write real small) talling the calories.
Under that I put an asterick and list what I have to remember for the day.
When I use this method, I can keep track of what I am doing.
I believe whole heartly that dieting is portions and calories. It is a balance. So I write it so I can see the balance.
On the Saturday, section I put a grocery list and on Sunday I put a list of menus. I work on this all week.
Now that I have probably confused you.. I think i confused myself.. Well if you take anything from this silly me thing.. Keep track of what you are putting in your mouth and what exercise you are doing.
My riding the bike really killed me on Monday, but by Friday, I was getting back in the groove. So if you have fallen off the exercise wagon.. Just get back on, start small, but start..

Breakfast Mini Cups

Another thrown together in a pinch breakfast.

Mini breakfast cups

1 can of refrigerator biscuits
1/4 cup of shredded cheese
1/4 bacon bits
1/4 cup of scrambled egg

Spray muffin tin. In each tin put a biscuit and push down a bit to create a small side.
Sprinkle in about a teaspoon or less of bacon bits (you could use any meat)
Sprinkle in a bit of cheese
Then I poured a teaspoon or more (not over the edge) of egg on top.

Baked at 400 for 20 min. Watch at about 15. Mine puffed up like muffins. When done let sit for a minute to cool.
Pull out an serve.

I was also thinking you could do so many different various for breakfast.
I was bet you could lay them on a tray and freeze individual and then pack in a bag for a quick heat up. Quick and easy and no mess.

Other things you could do would also be diced up pizza stuff and cheese and make mini pizza cups. I guess the ideas are endless. Sure makes it quick, not much mess and cheap. Right up my alley.

I guess I just wanted to take a moment and tell you about one of my kids, that I have watched grow over the years. He will start real school, (Kindergarten) on Thursday.
I guess you can say I become attached, I mean I invest my heart and soul into each child. I nurture them, teach them, and just lead them to ... the end of the nest. And during the last few months, I prepare them for what is ahead and letting go. I tell them how wonderful, how many friends, and how fun stuff they will get to do. Inside...weeeee... my heart just aches. I am getting the wings cleaned off and ready to fly, without feeling as if they are trading me for those wings..just stretching. On Friday, I will push another one out of the nest. And he is going to fly. I do love when the holidays come, cause they all come back. I always said if the only thing they take from me, is the memories of being kind and loving then I did my job well.
So to my baby bird... goodluck, good travels and a good wind...
See you when the holidays come.
I have been so blessed to stay home and get them during the holidays, times are getting tough money wise and I can only pray that God will send me some more baby birds, so that I can still get to see all my other birds come in for a visit. Hopefully the wind blows in a few more birdies my

Hey everyone, decided to blog a bit today, just to keep in the groove!

Haven’t been up to much this week. This is the second week of school. I feel as if I should have taken out a bank loan. This week alone I paid,
$20.00 lunch for my daughter
$20.00 lunch for my son
$25.00 parking pass for daughter
$25.00 For key club membership for daughter
$65.00 for a Senior Yearbook
$15.00 for Science Club membership for son
$ 170.00 wow, and that was only the first two weeks of school. Hopefully that will be it for a bit.

I am only watching a few kids and the income is low. But I still have to do what I got to do, so I can stay home with my children. Sometimes, I think people think that I do it to make money. But money is the least of the reasons. The number one reason, is so that it makes it possible for me, to be a complete mother. I am not putting down anyone who works, it just doesn’t work for me. I base my values on what I was taught and I reasoned with my thoughts and heart. I believe everyone has to do what they have to do, to make a nice laugh. More power, never judge.
I have been so blessed to be here when my kids come home. And even the kids that come to my house, I have been blessed to be a part of something wonderful. I always say, even if they can’t remember my name, or my face, maybe just at a brief moment they will always remember the love and teachings I left with them.

This weeks menu was:

BQ pork in crock pot w/baked potatoes, onions and ranch
Chicken Soup / brown bread and honey butter.(got that cool brown loaves, like at the outback)
Grilled Chicken Salad / with warm bacon bits and ranch
Hamburger Helper ( my kids asked for it, Guess I cook too many weird stuff)
Fridays, we had ordered wings. (Again I should have made them, mine I think are so much better)

My Diet Progress

Blah....didn’t have the energy this week. I gotta find a medium. I guess I am in transition. Haven’t gained any weight or lost. So I guess that is okay too. I don’t know sometimes, you feel as if you just try so hard and you just get tired of trying. Maybe it is just a mood. Hopefully I will have something positive to say next week.. All I can say this week is never stop trying. Pick yourself up and get going...

Individual Rice Cups

I did it again...well I think I did. I recently went to the store and paid $1.97 for two ready, to micro rice cups. I know lazy prevails. I like them cause they are portioned and quick. But I really got to thinking about it and you know what....

I came up with this:

Your Own Fast Rice

½ cup of instant rice ( I used Minute Rice, but I bet you could get a better price on generic)
½ (or less depending on your taste) teaspoon of chicken boulion seasoning
(or you can use beef)

*At this stage you could put it in baggies ( I squeezed air out, and made about 5 and put them in the cupboard in a square bowl, just handy for them to find, I printed the instructions on a index card and taped it inside the cupboard above the micro) and leave for the kids to finish.

To finish:
½ cup of water ( little shy if you don’t like it a bit wet)
2 cup container
take your 2 cup container
put in rice mixture
and 3 minutes
let sit a few minutes to cool..

I just looked on the large box of minute rice and it said 20 (½ cup) dry servings.
Which equals a 1 cup serving of 200 calories. When I tested this it was a bit shy of one cup.
But they were wanting $1.97 for those two tiny cups of minute rice at the store. So I think I still make out better.
I am going to make up some baggies and will let you know how many I get out of it versus the price.

Just wanted to share with those who are portioned those trying to save a dime here or there. It is all we can do in this day and age..

If you try it let me know..

You know if you know how to dehydrate you could do a batch of diced carrots, onion, peas and add them also, just adjusting the water a bit.

The next thing I am going to figure out is the mac and cheese in a bowl. My kids love that that quick convience...

Back To School Time

Well here in GA our county started back to school.. Now you know it is hotter...than....he---.
But they insist to start them earlier and earlier. Still don't know why, something about not remembering what they learned from one year to the next.. Hey isn't that what summer was all about.. Forgetting, letting go, enjoying, and being young at heart? It is a shame that they will all become such work alcholics at such a young age!!! No wonder we grow old and depressed..

But enough of my thoughts on that one.

My son started middle school. It seems not to be too bad. This year all the 6 graders live in the village..(the trailers, geeeeee and we live in an area where there are tornadoes.. could we be any safer....) But anyway, there won't be any lockers.. yes, you got it they got to carry around their bookbag all day long. My son also has to have a 1" binder for each of his 6 classes and has to carry his gym clothes also, because there were not any more lockers available.

For the science and the social studies there are books for the classroom and cd to take home for the kids to do homework. Now I am not a rocket scientist, but what happens if someone doesn' t have a computer. You know not everyone can be blessed with one, or even the money to have one. I again am shocked with the if you don't have it attitude, then you better get one.. Gee, sell your kids, or trade for

In short, he maybe likes it, but more so not. So really what is new. Still have to tell him to brush his teeth, put your underwear on right, don't eat like an animal and stand up straight. He hates me the majority of the time, but so did she. They do outgrow it. You just have to remember to forget what is said and stay the mom.. It is a dirty job, but someone has to be the mom.

My daughter is now on the top of the food chain......... She is a SENIOR. Oh my, and she knows it too. Naw, she is just too funny. I tell her to enjoy it as long as it lasts cause it goes soooooo fast.

Cooking in my Kitchen

This week made a new thing in my sandwich maker.. just love that little thing... it gets so hot here in GA that sometimes even the oven with AC makes it feel so sticky.
I took refrigerator biscuits (10) and two cheese sticks. Cut the cheese sticks in 5 pieces and place them in the biscuit, shaping like a calazone (half moon) be sure to spray the wells of the maker so they don't stick. Place them in and cook till brown. The kids dipped them in spagetti sauce. It made the cheese just gooey enough but not yucky.

My Diet and Exercise

Got back on my bike yesterday and was soooo disappointed, it killed me.. But today, I got on with out a hitch.. did the 5 miles and was happy with myself. I say this now, but probably in the morning I will be hurting.. but I couldn't stop biking.... Living La Vida Loca was on my MP3 playing and I was speeding...

I really need to rant and rave today.
Today was the first day of school. My son started his first day at the middle school here in GA. He was so nervous all weekend, worried he would get lost, not be able to find where to eat lunch, etc...
This morning he gets up all dressed and ready to go. He goes out side at 7:30 and waits for the bus with his friend down the street. The bus was scheduled for 7:50 so they were even early sitting there waiting. A bus came at 8 and it was the highschool bus, and nothing else until 8:25 which the bus (267) went speeding by, so quick you couldn't see the number until is was past you. We were so sure that they were bus 267. So I called the bus barn, and was put on hold, meanwhile I have two boys, going to a new school, that school started at 8:30. So of course I had already called the school twice and make sure they would get directions and have time, to get their stuff, cause the bus was late. So calling the bus barn again and being put on hold and then transfered to a msg machine that was full. At 8:50 a bus #268 pulls up and asks them if they are going to the middle school and they get on. I again call the school and confirm they are coming.
Meanwhile the bus barn calls me back to tell me that they should have been on bus#222. I was just stunned, because there was no 222 to come by, she then tells me that is must have been late.. well I saw another bus(couldnt see the number at 9:15) could have that been it. I told her that it was supposed to be there between 7:50 and 8 and she told me they were estimated times. And they were all running late... late....late... what so it would have been an hour and a half. Oh my goodness, I am soooooo sick.
So I again call the school to tell them that the kids needed to know that the bus # was 222 so that could atleast get home. Meanwhile on the other line, the mother of the other child, just said, forget it, I will go today at 3 and bring them home. And they can start out fresh tomorrow. So I have to call the school back to tell them mine is a car rider and could he call me... Simple right.. no... they said no, but they would give him a msg. to be a car rider....oh my... They talked to me like I was simple minded and crazy and that these kids (11 yo) were complete adults.
What is this world coming too... So of course I have let my imagination go nuts and think...well 268 picked them up, what if it was some crazy stealing kids...oh.... And of course can't call the stupid school again.. It may trouble them too much to make sure they have my child..
It is 2 now and only an hour more and they will be home...

I know that it all went well, but geezzzzz can't someone in this world just be human enough to help.

Wow, it has been one heck of a school vacation (summer) technically it is still summer. I am back to my regular few. I have been one busy, kid..

My kids start back on Monday, I am kinda sad. I actually, probably one of a few that like having their kids around. I would have even gone as far as home school mine. But I think they need the interaction with kids and the real world. So that idea is off the shelf.

I am heading out at 7am to the mighty Walmart with hopes of getting school supplies. I hope it isn't too crazy.. It is a tax free weekend around here. I can only imagine everything being out and sending my kids without. Oh won't that make the transition from elementary school to junior high so much nicer.

Last week went and took my son to get his warts looked at. It had finally gotten to the point where I couldn't figure what was his finger and his warts were. He said so good, while may I explain what they did. They took each one and shaved them down until he had pain.. Oh my, I couldn't even watch, I would have been yelling pain for the moment go.. He was sooooo great. Then if that wasn't enough, (the little boogers, bleed like crazy) she wipes it up and goes and gets the freezer off can.. About the size of a small torch for cooking...yea, and then held the nozzle to each one. I swear he turned a million shades of white. I really felt for him. They bandaged about 5 fingers and we left. He was in such pain. But what a trooper. It has been about a week and they are looking kinda scabby, lets hope that is the end of it. I know he was brave the first time, but the second time he will know what is coming. Think I will let his Daddy take him. You think?

Well this week in my kitchen, I have done some marvelous saves. It seems that I am more creative when I have less. I guess the addage, " Less is more".

Whats cooking:

Crockpot Philly Steak Sandwich.

1 package of steakums
1 onion
1 pepper
1 tablespoon of worshire or A1
1 pk of 6 hogie rolls
4 slices of provolone or your fav cheese

Dice up onion and peppers and layer in crockpot. Break up steakum on top. A bit of worshire. Put on lid and cook on low for about 4 hours. Sometimes it can be quicker. I also used my small crockpot.
When done fix hogie rolls with mayo and cheese and pile up the steakum. It was really good and the best part was that it was all my new "nice saves" in my kitchen. The onion was the last, the green pepper was what I had cut up and saved from a month ago (from my freezer). The steakums were found by accident, they were peeping at me from the corner of the freezer. The only thing I had to buy was the hogie rolls and the cheese. So almost a virtual cheap meal.

Potatoe Pizza

3 potatoes diced
1 onion diced
1 green pepper diced
real bacon bits
eggs ( I used egg beaters)
1/2 cup sour cream
1/2 cup of cheese any type. ( I find that cheddar does the best)
1 pizza crust

I premade the pizza crust and popped in oven to brown. In a pan I sauteed the potatoes, onions, greenpepper in olive oil. When tender I added the bacon bits, and then the egg beaters. Stirred until all cooked.
On the crust, I spread the sour cream on it and then emptied the whole pan on top. Topped with cheese and popped in oven to brown.

This also was a hit.
The kicker to this save was that it really emptied out the old fridge. Everything was needing to be eaten or made into something and this really fit the bill.

Gosh you would think I really love the food.

Exersize and my diet progress

Finally with the kids going back I can get back on my bike and stair master. I can't wait, nothing beats that good feeling.. ( I will probably ache for a bit, but that is okay) I still plan on doing that walking thing in the pool, it has turned out to really be fun and easy. I have no brain cells left from watching kids, so simpler the better.
As for dieting, it is hard. Especially having to watch the Diabetes. It is also harder now that groceries are getting expensive. Trying to stick to the beans and veggies. It is all a big change and small baby steps.

Well I gotta go, my family never bothers me, when I am laying down doing nothing. But the minute I make that motion to do something other than for them, they all come to find me. Hope you guys have a great weekend.. I will get back soon, keep in touch..

Another Hit Recipe

I was sitting around something to tame this craving for pizza, I really didn't want to order out and spend all that money, since I am the only one home.
So I created this quickie and I wanted to share...

1 pillbury pizza dough crust.. (but you could use any crust)
10 cheese sticks ( but you know also, you could save the cost, and buy a block of motzerella and then cut into fingersticks, that way you save some money)

Parchment Paper ( my fav lately, it is so easy to work with)
Pre heat at 400

I layed a piece of parchment paper the size of my pan on my counter. Sprayed with Pam spray and then rolled out my pizza crust (square)
I started at one end and placed a cheese stick a space and then another, rolled up in the dough once and then cut and pinch the ends, making sure no cheese was peaking out. I continued to do this till I got 10 of them. I just respaced them with about 1" around them on the parchment paper and put on cookie sheet. Sprayed pam on top, I used a bit of garlic salt on top and then sprinkled lightly with Parm cheese.
I put them in the preheated oven and by the time they were brown they were done. Watch them cause it happens fast.
I opened a can of marinara or even spagetti sauce and dipped them in there. I could only eat two. They were big, and watch also the cheese is hot and melty. They were really great.

You could make these on the small size for parties and use those pre-squared cheese bites and cut like baby ravioli. Or even better yet do it around the crust of the pizza pie. Just like the big boy pizza places.
They were just really easy and you will enjoy them.

Well hey to everyone...
My family is officially on the road to the big apple...NYC.... they should be there at the way they are going.. I would say about 8. They are really enjoying the ride, thank goodness for cell phones, it is just like being there with them.. I of course could not go.. it was planned at the last moment and seeing as I watch other peoples children, I can't just pick up and we have our own animal children. We have 2 dogs, 2 cats, (ouch.....the baby cat slid down my leg, just now) 1 rabbit and two birds. It seems that since all the family has left that the animals are very needy.. I haven't been anywhere in the house alone. Even when I went out side to get in the pool they were all up on the new ladder deck, that my husband made me.. just watching me.. gosh I wish they could talk.

I thought today that I would relax and get over the most yuckies stomach virus I have ever had.. I had the throwing up for two nights and the dreaded (other end ) for about 4 days.. talk about uncomfortable.. I also have to continue to eat and drink so that I don't dehydrate and mess up my diabetes.. so I am much better. I prayed everynight that no one else would catch it..imagine driving to NYC and getting it..uuuuggggghhhh " still hoping no one gets it.. would be nasty at someone else's house..

This morning, I have done alot of cleaning. Goodness never imagined how much you can get down with anyone around. I do have to climb over the animals, but I am really cleaning hard.
I have to pace myself or it will all be done...hahahahahha..never!!!!!!!!!!!!!!

Cooking this week

Well guessing from what I wrote above, there wasn't too much cooking.. Alot of running...lahahahahaha!!
Feed my family alot of grilled cheese, sandwiches, and soup.
I myself consider this a few lbs weight loss, a purging of all yuck in my colon.. now I am clean and ready to go....yuck....ahahah

Hey, I guess I am getting slow and behind on my blog... this summer has been a busy one. I lose a few kids I watch and I gain back more than what I lost. It is a never ending circle.

I am posting a cool picture of my son, he is going to be the next animal guy. He is good looking..mmm... looks much like his mother...naw, actually alot more like my husband. This Dragon he is wrestling is however just a statue, thank goodness, cause I am sure he would try to bring it home to live with us. He spent 4 hours at the zoo, and he must have looked at everything. Tried his hand at making a video at the Panda's. I will have to see how I can post that one. He is a natural. This week I went and bought a small video camera, just the little one. For him to practice. I am trying to nurture this side of him. The educational side, (schooling) is not one of his strong suites.

As for the last couple of weeks, just been doing the same things. Did inventory on all my cabinets and freezer. Making that food dollar stretch. I am a real creative little thing.

I am in the process of getting my husband and two kids ready to journey to NYC again on Friday. I am not going, one cause it was too soon a notice, and two we have a zoo here that can't be left alone. The husband feels the need to visit Yankee Stadium just one more time before the tear it down. His father used to take him and his brothers all the time, since they lived close by. It was their pass time.. Yes, it is die hard Yankees all the time around here.

I will miss them, but I still have kids to watch. The hard part will be the evenings, but atleast I won't be cooking and fighting.. I will still miss that.. I am sure the dogs will keep me company.

It is only for a week and then back into the fold. For the next few years they won't be able to go anywhere, we are getting ready to do an addition on the deck and renovate the kitchen. I will post as we go along..

Pickled Beets and Eggs

Got a craving for these purple eggs from my childhood. I just had to make them

hard boiled eggs, peeled and put in a jar.

1 can of beets, juice and all

vinegar to cover and I used splenda instead of sugar

then you wait a few days, the longer you wait the more purple saturates them...

mmmm.... they were soooooooo good..

This week I am working on my chicken and dumplings.. I just love those too.

And for my family, these will ring a bell..

Healthy note

On a healthy note. I have done the walking DVD in the pool, it is so much easier. I although only go the one mile for fear that the cat is going to push the DVD player in the pool. I will have plenty to write about then.

So guys gotta get running time for the nap time to be over. I will post more next week when I get a minute.. which I am sure I will have since I will be familyless for a few nights.

I am soooo sorry, I didn't make it by on last Sunday.. weeeeee.... my weeks are long and hard.. Watching my kids and the various others, wears me out. I am not the normal bonbon and soap woman. I get all my house chores done from 6am to 7am. Then I leave breakfast for my own children in the oven and pack my little basket. My phone, my cell phone, my medicine, my electric razor (just in case I have a moment alone before anyone comes..) bug bite stuff, bandaid, small dixie cups, ( for the dry cereal and the water for the little ones ) my sugar checker, and any other odd stuff for the morning. We have been spending the morning until 10am on the carport. My husband made me two tables 4' by 2' and you can sit 2 of those plastic white lawn chairs on both sides. I also have two small size picnic table.. I keep a few playsets, chalk, games, and an art box. I hung up two matching ( I try to make it nice) sheets to block the sun. It actually stays very cool out on the carport until 10 sometimes we go a bit longer and have lunch outside. After that I have plans for them all day long. We do crafts once a week, the pool once a week. I arrange various games.. In a simple word we are like busy, busy, and more busy. By the time the evening comes, it is dinner, clean up and poor mommy is asleep.
So I decided I would drop by tonight to wish all a safe and Happy Fourth of July..

This week I have devised a new plan for my groceries. I call it the "New Save"

What's cooking last week...(missed it last week)

"New Save"
I had a container of cornbread sitting in the fridge. I didn't eat but one piece of it and now we had hit day 4, no one was eating it. So I decided to revamp it. I took the cornbread and crumbled it up. Put in minced onion, minced celery, poultry seasoning, chicken boulion, a can of chicken I had laying around. Mixed together and moistened with warm water. I could have baked this and served like that. Instead I pattied it and fried it in olive oil. I really turned out good.

This week also did a italian sausage and peppers. I put the italian sausage (6 pack) dry in the crock pot. Left on low a bit till cooked. Removed and diced up. Put on low and cut up onions and peppers and a small can of tomatoe sauce. ( I also add garlic) Left it a few more hours. I served it on french bread. I actually ate mine with the juice also like a soup. You could put it on pasta too. progress

Not much to report. I am down to 240 now so that is 8 lbs since school was out. I stopped beating myself up over not getting to do my regular exercise routine. There are 4 more weeks left of summer vacation and I can start a new one. Life it to short to stress over it. I just try to swim more, move more and find exercise in anything I do.

Kitchen Ideas

I have decided to inventory all my cabinets, and use up what I have laying around. I have been pulling out of the freezer all week. So this week is a "no store" week. All I bought was milk, a bag of ice, and two fresh loaves of french bread... stressed out bread butter and a diet coke...yea...

Well I have to be signing off.. Gonna take a swim to destress. And then a big ole ice tea and my bed.

Happy Anniversary To Me......

yep, I have been married 18 years to a very wonderful guy. He is the best of the best. I can say that in this day and age, and not trying to be all sappy...... He is my soul mate. You know you wonder how people stay married for 50's of years and can truly say they are with their soul mate. I think that on my journey of being a wife, and a mother that I found that truth in the words soul mate. My husband is a hard worker and believe it or not, still happy to come home to us all these years, despite all the drama in this stupid world.
I can assure you there are days when I wonder why he married me.. I am soooo mean, as a snake sometimes, and then sometimes I think I am really weird (well in a nice way) He puts up with the social side of me. He is also very shy, and I am the opposite.
I can only pray that the next 18 years were just as great as the first ones.
So short this blog is today.....
To my love of my life, thanks for your dedication, respect and love. May the days ahead be bright and still full of excitement.

Hey everyone..
Did everyone make it through the Friday, the 13th. That is my lucky day. I always say that, I try to unstrength the bad luck charm. I have for years always said that to my kids. Hopefully they will keep it up. Bad things do happen, they happen to all of us. One day doesn't predict that. How about all the good things..does it have a certain day? Life is full of ups and downs and the important thing is what you do with that information. Keep your head up and full steam ahead....
Anyway, I am back... Gosh I was just looking over the past stuff and I have really made it back every week. Even with the ton of things happening at my house.
Everyone here is doing well.
The kitten has adjusted to the zoo (house) and is just part of the family. The older cat is still not content with her around, but atleast she is not running off and hiding, and that to me is a plus, cause she always hides in the room where I lay the baby to take a nap. I usually have to lay on my stomach and poke her out from under the bed.. Such a lovely site..!! She just loves to be around kids. Always catch her sleeping in a car seat on the carport. Weird huh?
All of my animals are weird. And the great catch is if they have a life span of 3 years they live 10. Don’t know what it is around here.
We had the goldfish that could never die. Usually they are a dime a dozen and in the toilet in short of a week, not mine he lived in an aquarium with all kinds of fish. He became the alpha fish.. Naw, actually I think the kids would go days without feeding him, and he devoured everyone else out of hunger. I solved that problem, by placing him by the kitchen sink counter so that I figured if I saw him every day, he would at least get fed. So by doing this I had now made a new friend. I could get him to come to the top and wait for me to feed him. I could also stick my finger in and he would come up and nibble me.. Cute trick.. Hey he could have been planning to take over the house and eat us..... The other problem with him was.. Oh yea, his name was ghost. My son named him. I would let the water go because I was afraid the clean water and the chemicals would kill him. I had such a good track record. I would let it go till it was green and slowly evaporated. Sometimes Ghost could swim in 6" of water. Through the years I added water that I had let sit on the counter. I finally purchased him one of those really cool bowls, that are ½ bowls and hang on the wall.. Thinking it would be easier to take care of him. He lived a long life. He entertained them all. I hung him right on the wall in the dining room. Such a piece of art. Ghost departed from our home..via the toilet probably a ripe old age of 6. My son has learned the cycle of life from the stories of all the departed. In our home, everything lives, and lives and lives.. When they go it is a blessing because they are usually showing their age.. They live great lives around here.
The weird thing is I think I inherited this. My mother has always had animals that have stuck around for years. She also had a goldfish, that had gotten stuck on a straight pin. Now how did that get in there. We were little, what can I say. She put her hand in every few hours and walked the goldfish, and he did live. Devotion, huh? After awhile someone got tired of the green water and put it out in the back yard under a bush. Someone I am sure was too lazy to clean it, We were just kids. HAHAHAH.. and after a few years we were cleaning the overbrush and we found the fish tank. And I kid you not poured it out and the goldfish was still alive. He was completely white, and his tail fins were about 6-8 inches long.. We put him in clean water and he passed away. You think....?????
I guess lots of love, hope, and faith keeps them around. I hope I have passed this on to my kids.

Now that I have ranted about animals. What about kids.. My kids have been pretty good this time so far... I am sure they will get super lazy, summer and all. My husband is on a mission to fix me a ladder to the 5 ft high splash pool we have.. I have decided that my 47 year old, hind end is not going to make it over much more. It has one of those metal kid ladders.. Every time I go up, I wonder how I am going down. So I will post a picture when it is done.

My Tips.... Just me talking to you...

Every week I have a million things to share and by the time I go to post I forget them. Wish I could carry you around with me all day... I had a book, but with all the kids around I forgot which book is what. I turn around and my book is the next color book or they are taking clean pages from me.

What's Cooking this week:

Crock pot parm chicken

2 jars of spagetti four cheese
6 chicken breasts. ( i just use the frozen)

a little sauce, lay in chicken and turn on. High for atleast 4 hours then I lower it at the end and add cheese. Doing this I don't use the bread crumbs and saves on calories.
I usually put this over pasta. But rice is a good second.

Baked Chicken and Stuffing
the stuffing was premade and frozen from the last time we were craving it.
It is my mother and fathers homemade sausage stuffing.
> A good tip is I shaped the stuffing in patties and sauteed them in olive oil for that crispy outside. They make individual size. If I am freezing stuffing, I freeze it uncooked and then when ready, I thaw and do the sauteeing of the patties.

I will be filling in the rest of the week with cold stuff.. Chicken salad, tuna salad, and egg salad. Kids aren't much for it, but I have grilled cheese and hotdogs for them. It is getting hot in the Old South now......

Healthy / my progress

Still really having issues with time. I am still losing a lb or 2 a week. Very slowly. It has been so hot that even getting in the pool is uncomfortable. I am trying to look at this bump in the road in a positive way. It is only for 6 weeks left. I figure if I keep moving and playing with the kids, surely it should count for something. 6 weeks also is not a lifetime. I have a lifetime, to keep motivated and to succeed in this life.

So for all my readers.. I send lots of motivation, laughter and love. I will leave you now to continue with my crazy life. Have a good week .

Wow, what a week.....
Oh forget my manners, hey! I hope everyone is well.

It has been very hot here in Georgia, and the AC’s have been pumping. Well, mine hasn’t, we said here for a day or two just wishful thinking that it was actually just cooling..but it was just too hot outside. Me and my children and the handful that I keep busy for the summer, all packed in the hot box. We utilized the carport as much as we could, and there was a cool breeze.
So anyhow, I called the AC place and asked for them to come... a week from now.. No way... oh my! I will pool into a puddle of sweat and the kids would just go mad!
So as I was contemplating my dilema, and doing dishes, cooking lunch, putting a bandaid on someones hurt, as you can tell I can multi-task. I used to think it was a gift.. But sometimes I can get so much going on at one time, I feel like one of the spinners and I am actually having lift off. IN the moment that I stopped to contemplate my dilema.... breathe...breathe...The phone rings and it is my friend, she has a friend that can come..
Yes... The man can come that day and that is so nice.. He looked at everything with my husband and tells him quickly, hey I will leave this all out and you can clean it. It will save you money. I will be back Thursday or Friday.. What!!!! ( now don’t get mad, it actually turned out to be a good thing) I guess that is what they call a test. We actually cleaned it, then and there. I got the man to come back on Thursday, and he said we did a good job.. He checked to make sure we got it all together. It only cost us $120.00 and if he had cleaned it, it would have been $300 +. So yes, we were tired, dirty, and could have screamed.
Sometimes I think we are given things to test us, to challenge us. It made us more aware of things that we could do without having to pay someone. I really think out of all this it made us feel upset at first, but amazed at what a person can do. As you get older we forget that we can do things.. That we still can think outside the box. So now under my hat of many things, AC maintence is there. Kinda heavy but I like

House Tip..
Well since it is AC time and it is hot for some of us...
My learned new AC tips..
>The big old baby outside.. you know the big boxxy thing in the back yard. If you look closely you will see there is a top with a fan in it.. called the head.. and surrounding the outside is what I call the fin thingys.. You need to becareful not to push on these, they are very bendable and they need not close, cause you will restrict air flow.. You need to periodically hose these off. With the direction of the fins.. sometimes too hard of a spray can bend them.
Also, my AC man.. said to turn off the unit while we cut grass cause the big thing is sucking in air and will suck up the grass pollen and it too will clog and block the air flow...
>Always keep your filter changed that will keep you from opening the whole thing up to clean that coil... (yes, we did that too)
All I can do is pass on my learned knowledge, use well....ahahahha!

Whats cooking this week...

Yes, I gotcha a new one to try...

Yellow Slaw

Shredded Cabbage.. (I was lazy and used a bag of precut coleslaw lettuce)
a bit of honey (did it by taste)
sugar ( i used splenda and it turned out just as good)
mustard (yellow, to taste)
vinegar ( i use the rice vinegar, to taste)

Mix all together and refridgerate.. I thought it tasted soooo good.. And without the mayo I didn't have to worry about it getting yucky.

Cabbage Soup

1/2 Head of cabbage cut in chunks
1 can of tomatoe juice
1 can of tomatoes diced with Jalepenos ( it was spicey.... you could use regular)

Put all together in crock pot and cook all day..
It was really tasty and filling. Great for dieting... It was also so wonderful a few days later.. the taste was so good..

This week at my house we are going for quick.. I am going to make tuna salad, mac salad, the yellow slaw, egg salad, and maybe a crock pot chili.
Trying to keep it cool... hot is not for me..

Healthy Ideas / my progress

I am in a holding pattern. I have to watch kids and I am finding no time for myself. SO I am trying to find ways to stick it in there. Usually by the time the kids leave at 6 I am dead. I have been trying to make a pool routine for small exercises. I haven't been near my bike in 4 days... I am sooo sad.. But I will work it out. My diet is well. I keep the low sodium soups handy for a quicky. I see if I eat every 3 hours or so, I don't do the pig out thing. Every day is an adventure.

In ending I hope everyone is having a great start to a great summer... Just don't sweat the small stuff and remember we are all in this game of life together.. holler at me if you want....

Hello and well wishes to everyone..

This week ended in a celebration of my child completing 5th grade. For those who know me, know how difficult time we have had through the years. Not so much as with my child, but with the teachers that he seemed to get out of the lotto of life. But this will teach him about different people. I guarantee you he had a bunch. I think my fav was the one that called him "Billy" all year. To my surprise there was not even a Billy graduating. So who know’s where the woman got that name from. Knowing my son, he probably just kept answering the poor old thing. He is somewhat of an enigma. But hey he is my child, through and through. Finish elementary school was a great accomplishment and one of his milestones through the path of life.

Now the summer begins... "racers to your mark!!!!" I watch a few kids along with my own. So I can guarantee it will be a crazy 9 weeks. Gotta pace myself, Gotta pace myself.....

I was thinking of posting what us crazys have got planned for the week. Maybe it will be useful ideas for someone else. Kids are hard to keep entertained. My goal this summer is too keep them moving, and I will keep moving. See it is a win, win situation.

On a sad note, last Sunday. The neighbors dogs were lose (they swore, they didn’t know they could get out) now come on! I yell everytime they are around. I assure you I can yell sooooo loud that they can hear me a state over. Geeeee, I know my own talents. But anyhow.... We have been collecting and rescuing turtles. We made them an outside terrarium (10' by 12') they were so happy. We had them for over a year and we got to see their life cycles. Hibernation, egg laying and even feeding them every day. Well these little dogs, got in there and carried them off. I am praying that they used their defense and stayed in the shell and the puppies got bored. Talk about a combinations of emotions. I was so angry, but in reality, you can’t blame the dogs, it is only their instinct. You could blame the owners, but accidents happen. I could blame myself for leaving them exposed. The lesson I think we have to learn here it that things happen. No matter how much time, effort or love we put into something, sometimes, things happen to change it all. We need to take from this experience just the positive things and forget the negative. I guess there you go.."It is better to love and lost, than to never love." or something like that.
So here we go... get up, brush it off and start again.. I am sure there will be more turtles that need a little Lynch love..

What's cooking this week!

Well it is going to start getting hot this week here in Georgia. I am going to try to keep less oven stuff going. Also with the additional kids, time is a factor, and take out is not the answer.
No recipes this week. But I am going to try the yellow slaw and if it is good I will post it next week. I am also working on recipes for the "sandwich maker" great for kids and summer time.

We are having:
hotdogs/yellow slaw and greek seasoned potatoe wedges
tuna noodle casserole (old standby)
Romaine salad with ginger dressing / boneless ribs
Miscellaneous appetizers (that is the small of bags of all the appetizers that we bought to try and had a bit left. ( always use everything)
Chicken and Brocolli and rice.

For the kitchen:

The garbage bowl. I know everyone thinks "Rachel Ray" invented the garbage bowl. But in truth I have been using one for years. Maybe cause it is easy to put it all in there. Or it is that lazy factor.... I love that term.

Healthy Ideas / My progress

I wish that I had a great new idea to the word diet. But I don't all I can tell you is not to ever quit trying. These last two weeks have been a whirlwind for me.. In the positive I have not gained any, yet not lost either. I have been running ragged and believe me.. I really think you got to make a conscience effort. I think that sometimes, is the key. It has to be balanced. When you have so much going on. Have children, sometimes you get lost in it all. I have been trying very hard to take the time for me. Sometimes, I feel so selfish. Sometimes I feel that I need someone to say, "Hey, I got that reigns, you go do what you gotta do". That however is the feeling I need to deal with, and I really didn't want to go and vent.. But I decided that this blog was going to be real. I want to be as real and open as I can possibly be without incriminating any


Oh yea, I have now taken my walking dvd and put it in the portable dvd player. Balanced it on the old ladder of the pool... get this I do it in the pool. NO HUFFING<> EASY ON MY JOINTS>>>>EASY PEEZY>>>.. I recommend anything you do, get a splash pool. Don't need anything big. Mine is a pond.. BUT it is all mine

Happy Memorial Day to everyone!

I hope this note finds everyone happy, healthy, and enjoying this wonderful day. Please remember to take a moment and remember all those that have sacrificed their lives for our freedom. Also remember our troops that are serving.

This week has been a pretty ordinary one for me. Not much sleep, been a full moon and around here we never sleep, I am always just uncomfortable and the animals are always on edge. I guess because it lights everything up. But hopefully I can get a few winks before the weekend is over.

I have been busting my hump trying to get organized for the summer (9) weeks of kids. I watch a few kids along with my own two. Gives mine someone to play (fight with) hahahah. I have planned lots of stuff to do. I really get back to the basics, parachute, hopscotch, freeze tag, and all those things I played when I was little. I make everyone leave the video games at home. Also I only use the tv for rest time and maybe on Movie Day. I make everyone play together, no sissy marys around here. I have also gotten out all the games I had laying around. Everyone probably remembers these classics, monopoly, life, memory, scrabble, chutes and ladders and the infamous candy land. Weeeeee won’t I be busy, jealous? Come join me, the more the merrier.

We also got our 15' splash pool up. Like I said before it said 1 hour set up. We end up in a heated argument on whether or not it is even and will it tip over. Then right after that they get in it and splash the waves.. It holds, yea, yea! The splash pools works for me. I bought a timer and the filter kicks on for 3 hours during the week and 6 on the weekends. I only have to change and clean filter once a week. Then add a bit of clarify, and algaecide. It stays pretty nice. My neighbors have the big 24' up ground, and if I position my float just right it looks like I am sitting in their pool. Mine is a pond compared to theirs, but at the right angle I am on the ocean. So sometimes the grass is a bit greener in someone elses yard..HAahaha! A nice hat for my head, (yea, I look real purty) and some sunglasses and I am at peace. Until some one jumps on me.. But it keeps us cool.

Whats cooking at this house this weekend. It has been hot here lately so I think I am off to the crockpot this week.


I make a combination pinto and black beans in the crockpot. Then I brown the meat with onions and garlic. Adding the beans, one can of tomatoe puree, and meat mixture. Leave in crock pot for a few more hours.

Breaded Flounder sandwiches
(Sam's club, sells some awsome flounder fillets)

Pork potatoes

Pork Butt in crock pot.
Cook with no water for 6 hours on high, then drain juice and pull apart and add bq sauce.

Bake Potatoes: Clean potatoes, poke, rub with olive oil and sprinkle with sea salt. Bake at 400 for one hour.

Baked Ziti

1box of penne noodles
1 sauce in can
1 container of rigatta cheese
1/4 cup motzerella cheese

Cook noodles, mix in sauce and rigatta cheese. Put in casserole, sprinkle with motz cheese and bake till warmed and melted.

For the kitchen

Inventory... a new word for me.. I am inventoring everything I have food wise in the cabinets. In this day and time with food so high. I decided to see what I really had on hand. I found a few surprises. I am using up all the stuff before buying again. I think that keeps me from overbuying. If anyone got an idea for canned asparagus let me know..

Healthy Ideas

I bought a clear quart container. I also bought a cantaloupe, strawberries, banana, apples, grapes (you could do what ever you like to mix.) I know fruit is expensive, but I tried to buy just a bit of everything so it made big thing. Crazy, but hey it works. On Saturday, I cut all this up and mixed it together putting it in the clear container. I use this when I have that sweet attack. When it gets to where no one is eating it, (before it gets to the point of bad) I save everything at my house. I will then make sugar free jello and pour the fruit mix in each 1 cup containers and pour jello over it and refrigerate. Then I have single serving cups. They then will last a bit longer.

Diet/ Exercise

Well now it seems that I am moving more than ever. I think that may be part of my success. Even if I am sitting, I have found something to move about. I also went our in our little bitty pond pool and did a lot of leg exercises. I felt really good when I finished. So my advice this week is just move. Even if it is only 5 of something, it is 5 more than you would have done. Please don’t give up. Every day for me is a battle. I am not super human and I have my bad days. Feel free to comment and share, sometimes sharing makes the bad days not sooooo bad.

Well like I said last week was very uneventful. Thank you!!!! Next week will be short too. It is the last week for my children at school. Next year my daughter will be a senior and my son will be 6th grade... oh, my. I just sometimes wonder where has all the time gone. Well hey to everyone. This week has been really nice.
My daughter turned 17 last Thursday and from that point on it seems as if the end of the week and the weekend have flown together in a blurr. I really can't believe that today is Sunday. A day of rest.... not here.
Yesterday, we had an outside party for my daughters birthday, the usual, hot dogs , hamburgers, lots of sun and water. It was really great. But it seems that as we party on the outside the black flies came inside to enjoy the cool air. I put up fly strips before I went to bed, got the majority of them.. but I came to find a very big, black one....ewwwwwwwwwww...
I am sitting at the computer and I hear the parakeets, just a chirping up a storm, so I proceed to get up and low and behold there is the big black fly....(?) on the end of the strip. I hung the strip on the end of a drapery rod in the front window. In a safe The baby kitten climbed up the cage to get to the parakeets and fell backwards into the fly strip. I find the cat on top of the parakeet cage with the end of the fly strip stuck to its butt. I can't reach it. So I take off the drapery rod, and it looks like a fishing pole with the strip as the string and the cat as the catch. I pull up and out and the kitten is dangling on the end. My son, grabs her and pulls one way and I the other, freeing her. Now we have a kitten with fly strip goooooo all down her back. Need I also say, she has bird feathers stuck to her.. And old fashion tar and
Oh, It gets better, I had to wash her in peanut butter, to get the sticky out. She climbed up me to get away from the water and peanut butter, up my tooooo big tank top (losing weight is great) and pulls it all the way down. Meanwhile I am trying to pull my shirt up, wash the cat. My daugher is yelling concentrate... I am laughing... and as usual having to run to the bathroom ( you know bladders!..) I rinsed the kitten as well as I could. Told my son to keep her with him, so the dogs wouldn't think she was a peanut butter cookie... and eat her. She is doing much better, she took a long nap after that and so did I ........
So I guess that was the cap to a beautiful weekend..

You know I have found that if I have a plan or a menu of what I am doing for the week that I in turn save money and time. Keeps the fast food away..

No new recipes this week. I will try to find something easy and inexpensive to make next week. With the summer coming I want to try to keep it light.. any ideas, let me know.

For the Kitchen
I have found another tip that keeps me from giving up and doing the fast food dance it to keep my sink clear and clean from dishes. For some reason when it is full, it kinda makes me not wanna cook.. give it a try..

Healthy Ideas
Water, Water, Water.. I try to drink it all the time. But you know it still doesn't thrill me. I found these really cool packets of lemon and lime (real) powered. They have really been a help to the water..

Diet/ Exercise
COOL beans.. found a walking dvd Leslie Sansone. It is really cool. When you are done you don't even know you walked that far. I have only done it twice.. But I will get back and let you guys know how it is in a few weeks. I am going to make the kids all do it this summer. Made a rolling media cart with a small tv and a dvd player on it. Figured I could roll it out on the driveway and get the all moving.. worth a try...

Soap Box Tuesday.

I came back to day, I guess to vent.
I really would like to know, why is that some people expect so much from other people, when they do nothing to help themselves?
I truly believe that once you reach a certain age.. (the age I am talking about is over 40) that you should be independent and responsible for your own choices. I know that life can throw some big curves and yet some of us, can't handle them. But there are some that keep making things worse. They eventually make it so difficult to even help. It then just becomes a bandaid. A waste of time, effort and money. The reasoning becomes so cloudy. But yet these people can keep partying, eating out, playing, and living in disgusting situations. They never want to change. But they always try to seek me out. Knowing that I can' stand the lies, and the cons. They never want to hear the truth, and yet they ask me for the truth. It really just blows me away sometimes.
I would never hit someone when they are down, I am always the motivator, a guide to positive solutions and outcomes. I always give much more than I recieve, even if behind my back they take and then talk trash about me. They are always soooooo innocent and a victim. But sometimes I am so tired of banging the drum.
I, years ago, had a child (in 83) which is no longer with me due to an car accident. But that is another story. I will share with you at another date. When I am feeling inspired to share and not venting about ugly people. Any how, I picked myself up, and did what I had to do to survive. I lived with family with 6 kids. I slept in a bed with 4 of them. With rats crawling on me.. flies and dirt all around. I gave them all my paycheck, they took it all. I walked back and forth, night and day, hot and tired about 5 miles every way to and from. I cooked and cleaned for them. Pregnant. When I left, no one believed me on how hard it was there. They also talked nasty about me. So I know how hard life can be, but I survived and I truly hurt no one in the process. The same kind of people are all around us. Users and takers that can't survive or move forward. I guess the world is full of ugly acting people.
Can't people grow up. Just be decent. Respect for themselves and those around them. I guess all I can say is I will not change, and I will not become petty and selfish. I can only pray for their souls. But please get up and try to survive.. without taking prisoners, emotionally. I know you all can do it.

I know, I know, I dated this for Monday and it is only Sunday. I was afraid that I would just get so busy, that I wouldn't make time to keep my commitment to this blog.
I hope that atleast I am making someone smile, or even a casual thought as to what the crazy stuff I can write about.
Let me tell you about my Mother's Day..
Help, can I come live with you?
First let me tell you, I love my family, wouldn't be able to do without them.. But today.. You know those days, when nothing makes a lick of sense and you are sooooo overwhelmed just trying to do the basic things. It seems around here as if you want to do something, you have to do ten things to get to that something. And besides that my two dogs, they are both over 50lbs., when someone raises their voices they run and they run up under me.. Yes, mother to two big dogs. I was aching from putting up the splash pool. That is entirely its own story. The end of this story became full of screaming, crying and finally the quiet hush, of everyone hiding, till, I cooled off. The one thing that kills me, is the bathroom. I have a husband and one boy, they are so much alike it is scarey. I can't for the life of me understand how it gets sooooo dirty.. and how two men can use sooo much toilet paper and still tread marks on their I just had to say it.. That really made me feel good....Well after finally laying down and cooling off, I came to the conclusion that I needed to stop and start again tomorrow.. Cause I can promise you, it will still be there.

Now yesterday we put up the 16' splash pool that we usually have. And I of course power lifted the side poles to let my husband put dirt under to level the pool. This pool says on side of box.. "easy to put together... one hour" yea and who wrote this one. Probably the same people who said to have a "happy period".... Another good one.. I am so making myself laugh. So I guess this blog is good for something. Every year for the last 5 years we struggle with the level of the pool and every year it still holds up. Now that I have written this they will dive bomb it and send it collapsing into the yard. Everything happens around here.

I posted a picture of my new kitten.. her name is Brooklyn. You don't think we are from NY or something do you???? I think though we should name her Sweeny Todd. The barber who sliced necks. She actually sat on the bed the other night and watch the movie with me and my daughter. Then the next morning under the chair is a dead mouse...with no joke...on its back..with its neck sliced... oh no...oh yes...

I had a can of sweetened condensed milk.. you know know what they said to do... take the can and boil it for 4 hours, keeping the water above it.. and then let it cool.. guess what it makes.. carmel sauce.. I am going to try it.. but the 4 hours watching it is a tough one..

For the Kitchen
I premade the PBJ sandwiches for my son. This keeps from waste and over doing it. I will make that jar of PBJ (it is all in one jar) last a bit longer

Healthy Ideas
I keep a container of precut celery and carrots in water. Quick and easy to get to.
I also found a carry container that you fill the bottom and put the dip in a container on top. All insulated with a small ice pack thingy under the dip container. Makes for a healthy treat.

I have order a new tape for the dvd for walking in your living room.. I am hoping that I can get them all up and walking with me.. Will post on how it does..

Well I am ready to venture into another week. This week my Daughter will turn 17. Gosh do they grow quickly..

Happy Mother's Day

That goes for everyone. Even the women without children, I am sure they have someone that they love and tend to. When I am asked what I want for Mother's Day, I am always stumped. It seems that usually if I need it, I either wait for a bargain, or I figure out how to get it. A wise woman once said, " Every Day is Mother's Day" Every day you are a mother. It never changes, someone always needs lots of loving. Children, Family, and the animals. Shoot around my house, the birds, the cats, and the creatures of the house.

Monday, May 5th 2008

Wow, can you believe it. I came back. I have actually made time for this. I feel that something great is coming of me writing. If not for anything, then for practice, venting, and letting go of all the stuff I like to talk and share. I hope it hasn't become to dull for you guys.

Last week, we adopted a baby kitten, and it is very wild around here. I would have thought it would have shyed away from the big dogs, but no, it knows no fear. Imagine if we were all like that. Just do it, get past the fear of it all. I think sometimes, that fear is an illusion. The gate to the path of the unknown. Just because it is unknown is not a bad thing. Like they say if you don't try it you will never know.
I feel as if in the last 6 months, that I too am on an adventure. Something separate yet tied back into my family. I think sometimes mothers feel, well I felt this way, that if you do something separate or just think about your self, that you take from the others. Yet if you don't take care of yourself you will not be able to give anything to your others. I know this by feeling so bad, and not healthy for the last 5 years. I always felt drained and lack of any creativity. I got out of this funk by just taking control of my life. Prayer is an important part of my life.
One of my main problem is that I like to control things. It still is important, yet as I get older, I am having to let go of somethings. It seems as if it pulls me down. I am learning more now that I have to trust myself and God. I really have to let it just work out. I can't always fix it.
I can tell you every day is a journey.
My diet is doing so great. All I did was pick the amount of calories I needed and try to stay on the healthy side and exercise. And trust myself to do the right things. I really don't know the outcome of this journey with my weight. All I can do is keep going, keep trying and let it work out.. get it.. work out.. okay...seriously..I have lost 26lb since December. Yea, Yea, Yea

Recipes of the week (be sure to leave a comment if you try these)

Talipia (I never do say this write.. it is one of those words that just throws me... So I will call it the fishy thing dish..hahah)
breadcrumbs (croutons)

I was short on the breadcrumbs this time, I looked all over and all I had was croutons. You know the kind that everyone liked in the beginning and then forgot about. Well I put them in my blender and made them the crumbs.. sprinkled in a bit of lemon pepper and that was that
I rinsed my talipia and just dipped in the crumbs. (didnt use any eggs or flour) placed on a pam sprayed cookie sheet.
Baked for about 20 minutes at 400. I had to go a bit longer.. you want it to be flakey.
It was really great.. made homemade tartar sauce. Mayo and a bit of pickle relish

Lemon Grits

4 packs of instant grits
1/2 water
1/2 the lemon juice
(optional lemon zest)
nuked like on package.

These went really great with the Talipia and even my salmon cakes from the other week.

Tips .... Just me talking to you.....

Kitchen Tip

For weekly salads I precut all the fixings, In one container I put enough for the week. And in 5 sandwich baggies I prepare salads, and the veggies. Then squeeze air out. In the snack baggies I put the salads proteins and cheese. My husband takes one everyday, with a squirt dressing and his collapseable bowl. Cheap and easy. Just prep.

Diet Tip

Everyone loves French fries. I portion them before they go on the baking pan and put them on the plate. NO seconds and believe it or not without the pan sitting around, no one even asks. Eat slow and they taste like you have been eating a ton.


This week I will just keep adding one more set to what I do every day. I have got to figure out how I can continue in the summer with the kids. I get so wrapped up, time flies and there I have missed my exercise time.

Well that is what I had to share this week. By no means think I got it all undercontrol. I am just leaning back and moving forward slowly.
